Weekly fitness menus
Professional athletic organizations and corporations use Spectrum Culinary to feed their A-list athletes & staff. We provide weekly menus that are both delicious, and healthy, developed in partnership with a licensed nutritionist. The sample menus below are based on a 4-week schedule and changed each week.
Week 1 Breakfast
Egg Scramble with broccoli, spinach, ham and yam home fry
Joes special tortilla roll with ground beef, spinach, onion, mushroom, and eggs
Week 1 Entrées
Maple glazed bacon wrapped chicken thigh with brown rice and sautéed spinach
Cajun chicken and shrimp sautéed with bell pepper and onion, sweet potato puree and oven roasted zucchini with tomato
Turkey sauté with brown rice pasta and sautéed asparagus
Grilled salmon with chimichurri sauce, black beans and sautéed kale
Lamb meatball with tomato sauce, quinoa, herbed spaghetti squash, green beans and tomato sauté
Coffee rubbed steak with demi glaze, yam puree and roasted Brussels sprouts
Week 2 Breakfast
Egg scramble with asparagus, tomato, basil, bacon and sweet potato chip
Santa Fe egg scramble with pepper, onion, tomato, sausage and corn polenta

Achiote chicken with black bean and squash medley
Jalapeño Dijon chicken with sweet potato mash, sautéed spinach and roasted tomato
Turkey meatball with marinara sauce, rice pasta with pesto and zucchini Parmesan
Grilled mahi-mahi with fire roasted tomato sauce, Spanish brown rice and sugar peas
Lamb patty with rosemary-scented sauce, yam puree and seasoned green bean
Roast beef with sherry scented demi glaze, roast sweet potato and kale, mushroom, and onion sauté
Week 3 Breakfast
Breakfast tortilla roll with grilled carne asada, egg, potato, a little cheese and salsa fresca
Country egg scramble with tomato, sausage, basil and sweet potato home fry
Week 3 Entrées
BBQ chicken with brown rice and grilled vegetables
Chicken cacciatore with pepper, onion and tomato, yam chip and roast zucchini
Ground turkey sauté with green olive and tomato, roast sweet potato, zucchini noodle and sautéed spinach
Maple glazed salmon with herb quinoa and chopped broccoli sauté
Pork tenderloin with blueberry balsamic glaze, sweet potato puree and green beans
Meatloaf with sautéed mushroom, onion demi glaze, yam puree and sautéed kale
Week 4 Breakfast
Breakfast skillet with scrambled eggs, beef chili and home fry sweet potatoes
Power protein pancakes with fresh granny smith applesauce, maple syrup, dried fruit & nut compote and bacon

Chicken fajita with Spanish brown rice, onion, pepper and tomato
Baked fried chicken with sweet potato puree and broccoli
BBQ turkey meatloaf with cauliflower mash, sautéed kale and roasted zucchini
Grilled Salmon with tomato basil compote, black japonica rice and sautéed asparagus
Grilled flap meat with fire roasted tomato sauce, toasted fingerling potato and seasoned green beans
